If you are thinking about adding more vegetables to your list I have a few ideas that I usually have for Thanksgiving.1: Brussel Spouts: just cut them in half let them so in some cool salted water for a bit and then drain and cook them, most of the time removed most of the bitter flavor.2: Sauteed Leeks: basically what i do is cut them in the ring shaped way and then let them soak in water while occasionally breaking some of them up and getting the dirt all out, then get a nice pan add some olive oil or butter to coat the pan and then toss the leeks in after you drain them, add a bit of salt and maybe a tiny bit of better and cook till they start getting soft, be careful not to burn them of course3: My mom uses this as a appetizers as well as an optional side, its just carrots, broccoli, cherry tomatoes, celery, an 2 types of bell peppers with a nice dip in the middle.4: Finally if you want something a bit different for mashed potatoes try the red mashed potatoes or if your doing them fresh sometimes a little vegetable broth adds a nice flavor to them.
